Rocky road is one of those delightful treats that perfectly blends crunch, chewiness, and a satisfying chocolate hit. This Malteser rocky road recipe takes the classic combination to a whole new level with the addition of everyone’s favorite malted milk balls. Whether you’re whipping up a batch for a party, a gift, or just an indulgent snack, this recipe is sure to please.
Preparing the Biscuit and Marshmallow Mix
To start, you’ll want to prepare the biscuits and marshmallows. You will need to use a plain type of biscuits; digestive biscuits work wonderfully here. Break them up into a mix of larger chunks and smaller crumbs. If you’re using large marshmallows instead of mini ones, simply slice them into quarters so they spread evenly throughout the rocky road.
Combine the biscuits, marshmallows, and roughly broken Maltesers in a large mixing bowl, ensuring that all the pieces are well mixed and ready to be coated in chocolate.
Melting and Mixing
Next, it’s time to prepare the chocolate mixture. In a heatproof bowl, add the milk chocolate, dark chocolate, cocoa powder, butter, and golden syrup. Place the bowl over a pan of simmering water, stirring occasionally until everything melts together into a smooth, glossy mixture.
Once melted, take the bowl off the heat and allow the mixture to cool for about five minutes. This cooling step is crucial as it prevents the marshmallows from melting when you combine everything.
Pour the cooled chocolate mixture over the biscuit and marshmallow mix. Stir thoroughly, making sure every piece is evenly coated in that rich, chocolatey goodness. Once mixed, transfer the rocky road mixture into a 20cm x 20cm baking tin lined with baking paper. Spread it out evenly, pressing down lightly to create a compact layer. Pop the tin in the fridge and let it chill for at least two hours.
When ready, use a sharp knife to cut the rocky road into squares. The result is a treat that’s not only delicious but also visually appealing, with the Maltesers and marshmallows peeking out from the chocolate.
