Rustic Peanut Crisps

Ingredients
 

  • 115 grams butter
  • 170 grams sugar
  • 285 grams self-raising flour
  • 1 egg
  • 1 cup chopped peanuts
  • 1 teaspoon cocoa
  • 100 grams dark chocolate, for drizzling

Instructions
 

  • Preheat oven to 170 °C.
  • Cream together the butter and sugar.
  • Add in the egg, then peanuts and finally the dry ingredients, mixing between each addition.
  • Roll small balls of dough in your hand and place onto trays lined with baking paper. Press each ball down flat with a fork.
  • Bake the biscuits for 22 minutes, until lightly golden. Transfer to a wire rack to cool.
  • Melt the dark chocolate and transfer to a piping bag. Drizzle over the top of the biscuits.

Finishing the Peanut Crisps

Place 100 grams of dark chocolate inside a ziplock bag and melt it in a bowl over a pot of boiling water. Snip a corner from the ziplock bag and then drizzle the chocolate across each biscuit (it’s like using a piping bag).

Allow the chocolate to set and then transfer the crisps to an airtight container. The peanut crisps will keep for up to a week.
