Malteser Rocky Road

- 125 grams milk chocolate
- 125 grams dark chocolate
- 1 tablespoon cocoa powder
- 100 grams butter
- 90 grams golden syrup
- 125 grams plain biscuits, roughly broken
- 125 grams maltesers, roughly broken into large pieces
- 60 grams mini marshmallows
In a heatproof bowl, add the chocolate, butter, cocoa powder and golden syrup. Place the bowl over a pan of simmering water and stir until everything is melted.
Remove the bowl from the heat and set aside to cool for 5 minutes.
In a large mixing bowl, combine the marshmallows, broken biscuits and maltesers.
Pour the chocolate mixture over the malteser mixture and stir to thoroughly combine.
Pour into a 20cm x 20cm baking tin that has been lined with baking paper. Transfer to the fridge and leave to cool for at least 2 hours.
Use a sharp knife to cut into squares before serving.
