Grill-Pan Waffles with Berry Sauce

Ingredients
 

Waffle Mix

  • 2 eggs
  • 300 ml milk
  • 240 grams self-raising flour
  • 2 teaspoons baking powder
  • pinch salt
  • 120 grams butter, melted and cooled plus extra for cooking

Berry Sauce

  • 2 cups frozen berries strawberries, raspberries, blueberries
  • ½ cup sugar
  • 1 tablespoon cornflour
  • 1 tablespoon water

To Serve

  • yogurt
  • icing sugar

Instructions
 

  • Crack the eggs into a large bowl, add the milk, whisk to combine
  • Sift the flour, baking powder and salt. Add to the milk mixture and whisk until combined.
  • Add in the melted butter and gradually stir through the mixture. Be careful not to over-mix the batter or you will end up with a tough waffle.
  • Place your grill pan on to high heat and allow to warm. Add a tablespoon of extra butter and allow to melt.
  • Once the butter has melted, add your waffle batter to the pan and spread to fill the pan. Alternatively, make smaller waffles by adding a 1/4 of the batter to the pan at a time. If you are making smaller waffles, add extra butter between cooking each waffle.
  • Lower the heat to a medium-low and cook for 5-6 minutes, or until golden brown on the bottom. Flip over and cook for another 5-6 minutes on the other side, until the waffle is cooked through. It can be tricky to flip the large waffle, all I can say is go for it, and it will still taste great, even it if breaks.
  • Meanwhile, as the waffles cook, prepare the berry sauce.
  • Add the berries and sugar to a medium saucepan. Heat over medium heat for 3-4 minutes, until the sugar has dissolved
  • Add the cornflour to the water and mix to form a paste. Stir the cornflour paste into the berry mix and then stir for another 4-5 minutes until the sauce has thickened.
  • To serve the waffles. Cut the waffle into 4 pieces and divide among plates.
  • On top of each waffle, add a dollop of yogurt, a spoon of berry sauce and a dusting of icing sugar. Serve while hot

Have you ever wanted to make golden and fluffy waffles at home, but don’t own a waffle maker. You have come to the right place! Grill-pan waffles are great way to cook soft fluffy waffles in your own home, but without the need for any fancy cooking equipment.

The other beautiful part to grill-pan waffles is the crevices created through the grill pan. The ridges provide a great crispiness to the edges and are great for holding in the gooey syrup or a delectable sauce.

Preparing the Grill-Pan Waffles

To start the waffle batter, in a large mixing bowl add the eggs and milk. Whisk until they are combined.

Next, sift in the baking powder, salt and flour. Whisk the mixture again, until just combined together. It is important not to overmix the batter at the point or the waffles will come out tough.

Finish the batter by stirring through the melted and cooled butter.

Cooking the Waffles

Heat a grill-pan over a medium-high heat. Add a generous dollop of butter, and swirl to coat the pan. At this point, you have 2 options on how to cook the waffles: either as one big waffles, or adding in 1/2 cups of batter at a time. Turn the heat to low and then cook the waffle for 5-6 minutes. Flip the waffle and cook the other side for an additional 5 minutes.

Tips for cooking the batter:

  • Don’t skimp on the butter when cooking, this is what gives it it’s golden deliciousness.
  • If cooking one large waffle – when it comes to flipping the waffle, just go for it. It’s large but you have got this. You’re not making perfectly printed waffles like your waffle maker would. If it breaks a little in the flipping process, it’s just going to add to the rustic effect.

The Berry Sauce

While the waffles are cooking away, prepare the berry sauce.

For making the berry sauce, add the berries and sugar to a medium sized saucepan and place it over a medium heat. Heat for 3-4 minutes, until the sugar has dissolved. Combine the cornflour and water together to make a paste, and then add the paste to the berry mixture. Heat the mixture for another 4-5 minutes, until the sauce has thickened.

Any combination of strawberries, raspberries, blueberries and blackberries is going to work great for making the berry sauce. Fresh berries also work, but you will need to add in some water to get the right level of moisture. Try about 1/4 cup of water if using fresh berries.

The berry sauce also makes for a great snack served over yogurt, if you somehow have leftovers.

Other Toppings

While we are going a bit naughty with the waffles, I like to think that adding yogurt and fruit balances out the unhealthiness a little. You could also go for maple syrup and icecream or bacon and eggs as alternative topping suggestions. Really, the waffles will pair well with whatever your favorite topping is.
