Ingredients
- 450 grams baby carrots, peeled
- 30 grams honey
- 1 clove garlic, minced
- 1 tablespoon butter, melted
- 1 tablespoon olive oil
- ½ teaspoon cinnamon
- ½ teaspoon ground ginger
- salt and pepper
- fresh herbs to garnish (such as parsley)
Instructions
- Preheat the oven to 220 °C. In a mixing bowl combine the butter, oil, garlic, honey, cinnamon, ginger, salt and pepper.
- Toss the carrots through the honey mixture, ensuring they are all sufficiently coated.
- Transfer the carrots to a tray lined with baking paper. Roast the carrots for 20-25 minutes, turning halfway through.
- Transfer to a serving dish and garnish with fresh chopped herbs.

Which Carrots Should I Use?
For this recipe, try using a fresh bunch of baby carrots if they are available. However, if regular carrots are all that you have on hand, they will also work. Rainbow carrots would also work great for this recipe and will add some nice color to the dish.
If the carrots you are using are thicker than baby carrots, chop them in half lengthways so they will roast quicker.
Glazing the Carrots
The secret in why this recipe tastes so good is in the honey glaze. Combine the honey, butter and olive oil together, along with some cinnamon, ginger, garlic, salt and pepper. Give the mixture a good mix and the glaze is now ready to coat the carrots.
Toss the carrots through the glaze mixture, ensuring the carrots are sufficiently coated all over. Next, take the glazed carrots and spread them across a tray lined with baking paper.
Roasting the Carrots
For roasting, your oven will need to be preheated to 220 °C. Place the carrots in the oven and roast them for about 20-25 minutes. Halfway through the cooking process turn the carrots. We are looking for a nice subtle caramelization over the carrots, to know when the carrots are ready.
Lastly, remove the carrots from the oven and garnish with chopped fresh herbs. Serve them alongside your favorite mains dish or eat them warm as a snack.
