Ingredients
 

  • 450 grams baby carrots, peeled
  • 30 grams honey
  • 1 clove garlic, minced
  • 1 tablespoon butter, melted
  • 1 tablespoon olive oil
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • salt and pepper
  • fresh herbs to garnish (such as parsley)

Instructions
 

  • Preheat the oven to 220 °C. In a mixing bowl combine the butter, oil, garlic, honey, cinnamon, ginger, salt and pepper.
  • Toss the carrots through the honey mixture, ensuring they are all sufficiently coated.
  • Transfer the carrots to a tray lined with baking paper. Roast the carrots for 20-25 minutes, turning halfway through.
  • Transfer to a serving dish and garnish with fresh chopped herbs.
