Honey Glazed Carrots

- 450 grams baby carrots, peeled
- 30 grams honey
- 1 clove garlic, minced
- 1 tablespoon butter, melted
- 1 tablespoon olive oil
- ½ teaspoon cinnamon
- ½ teaspoon ground ginger
- salt and pepper
- fresh herbs to garnish (such as parsley)
Preheat the oven to 220 °C. In a mixing bowl combine the butter, oil, garlic, honey, cinnamon, ginger, salt and pepper.
Toss the carrots through the honey mixture, ensuring they are all sufficiently coated.
Transfer the carrots to a tray lined with baking paper. Roast the carrots for 20-25 minutes, turning halfway through.
Transfer to a serving dish and garnish with fresh chopped herbs.
