Ingredients
 

  • 4 chicken breasts
  • 60 grams breadcrumbs
  • 80 grams parmesan cheese, finely grated
  • 1 lemon, rind grated and juiced
  • 60 grams butter, melted
  • 2 tablespoons fresh parsley, chopped
  • salt and pepper

Instructions
 

  • Preheat the oven to 190 °C. Line a tray with baking paper.
  • In a small bowl, mix together the breadcrumbs, parmesan, lemon zest, butter, parsley, salt, and pepper.
  • Flatten each chicken breast using a kitchen mallet or rolling pin and place onto the prepared tray.
  • Divide the breadcrumb mixture between the 4 breasts and press on top to form an even coat.
  • Bake for 20 minutes, until golden brown on top. Remove the chicken from the tray and add the lemon juice to the juices on the tray. Pour the lemon juice mixture over the chicken and serve immediately.
