Preparing the Ingredients
Begin by removing the seeds from the jalapeno and finely dicing the flesh. This is best done by slicing the jalapeno into long strips and then bunching and dicing into small cubes. A sharp knife is a must here.
Next, husk the sweetcorn and carefully remove the kernels from the cob. For this, stand the corn on end and use a sharp knife to slice off one side. Rotate and slice, repeating until all the kernels have been removed. A shortcut here could also be to use canned sweetcorn, but fresh is definitely a far superior option here.
Finish your ingredient preparations by grating 160 grams of a sharp cheddar cheese. Set all prepared ingredients aside while you continue to make the batter.
Mixing the Batter
In a large mixing bowl, combine the self-raising flour, eggs, milk, salt, and pepper to form a smooth batter. Be mindful not to overmix, as we want the fritters to maintain a light and fluffy texture.
To the batter, add the diced jalapeno, sweetcorn kernels, and grated cheese. Gently fold the ingredients into the batter until evenly distributed, ensuring each bite is packed with flavor.
Frying the Sweetcorn Fritters
Heat a large frying pan over medium heat and add a couple of tablespoons of olive oil. Using a 1/4 cup measuring cup, scoop the batter into the pan to form fritters. Cook for 2-3 minutes on each side, or until golden brown and crispy. You may also need to add additional oil between cooking the batches of fritters.
Don’t overcrowd the pan when cooking. Doing so makes it harder to flip and also reduces the temperature which will impact on the crispy exterior.

Once cooked to perfection, transfer the fritters to a serving platter and serve warm. Serve these tantalizing Jalapeno and Sweetcorn Fritters with a generous scoop of creamy guacamole, oven-roasted tomatoes, and crispy bacon.
