Satay Chicken Skewers

Ingredients
 

  • 700 grams chicken breast (approximately 3 breasts)
  • 200 mL coconut cream
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • ¼ teaspoon cumin
  • ¼ teaspoon ground ginger
  • ½ teaspoon ground coriander

Satay Dipping Sauce

  • 50 grams peanut butter
  • 200 mL coconut cream
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • ½ teaspoon ground coriander
  • 1 tablespoon brown sugar
  • 1 lime, juiced

To Serve

  • 2 tablespoons peanuts, roasted and roughly chopped
  • 1 teaspoon sesame seeds
  • 1 red chilli, thinly sliced
  • fresh coriander, chopped

Instructions
 

  • Slice the chicken into long thin strips. Place the chicken in a large mixing bowl along with the soy sauce, garlic, coconut cream, cumin, ginger and coriander. Mix together and then cover. Place in the fridge and marinade for at least 1 hour.
  • Place all the satay dipping sauce ingredients into a saucepan (except the lime juice) and heat over a medium-low heat. Stir until thickened, but don't let the mixture boil. Remove the sauce from the heat and stir in the lime juice. Set aside.
  • Remove the chicken from the fridge and thread onto skewers. Heat a barbecue on high heat and cook the chicken for approximately 10 minutes, until golden brown and cooked through.
  • Place the skewers onto a serving plate and then top with slices of chilli, fresh coriander, a sprinkling of sesame seeds and some chopped toasted peanuts. Serve the dipping sauce in a bowl on the side.

Marinading the Chicken

Begin by slicing the chicken breasts into long, thin strips and placing them in a large mixing bowl. Now, it’s time to work on the marinade itself. Combine the sliced chicken with soy sauce, minced garlic, coconut cream, cumin, ginger, and coriander, ensuring that each strip is thoroughly coated with the aromatic mixture.

Once everything is well mixed, cover the bowl and pop it into the refrigerator for a minimum of 1 hour. This resting period allows the chicken to soak up all the delicious flavors, resulting in a more tender and flavorful end product.

Crafting the Satay Dipping Sauce

While the chicken is marinating, let’s turn our attention to the creation of the satay dipping sauce. In a saucepan set over medium-low heat, combine peanut butter, coconut cream, fish sauce, soy sauce, ground coriander, and brown sugar. Stir the mixture continuously until it thickens, being careful not to let it boil.

Once the sauce has reached the perfect thickness, remove the saucepan from the heat and stir in the fresh lime juice for a burst of zesty flavor. Set the satay dipping sauce aside until it’s time to serve.

Grilling the Satay Chicken

Preheat your barbecue to high heat, ensuring it’s nice and hot before you begin grilling. While the barbecue heats up thread the marinated chicken strips onto skewers. Fold the chicken strips back and forth on itself as you thread it on, which will help hold the skewers together during the cooking process.

If using wooden skewers, soak them in water for 30 minutes before using. This will stop them burning so easily during the grilling process.

Place the skewers on the preheated grill and cook for approximately 10 minutes, turning occasionally to ensure that all sides are evenly cooked. Keep a close eye on the chicken to prevent overcooking, aiming for a golden brown exterior and juicy, tender interior. You can use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (75°C) for safe consumption.

Serving the Satay Chicken Skewers

Once the chicken skewers are cooked to perfection, transfer them to a serving plate and garnish with sliced red chili, sesame seeds, chopped roasted peanuts, and fresh coriander for an extra burst of flavor and texture.
