Breakfast Baked Eggs

Ingredients
 

  • ¼ cup marinara sauce
  • 2 eggs
  • 1 tablespooon milk
  • 1 tablespoon grated parmesan cheese
  • 1 tablespoon grated gruyere cheese
  • ½ teaspoon fresh chives, finely chopped
  • salt and pepper

Instructions
 

  • Using spray oil, lightly oil a 300mL capacity ramekin. Preheat the oven to 210 ℃.
  • Place the marinara sauce in the bottom of the ramekin. Add the milk on top and then crack in 2 eggs. Sprinkle over the cheeses, season with salt and pepper, and then top with freshly chopped chives.
  • Place the ramekin in the oven and bake for 16-18 minutes, until the egg whites are cooked through.
  • Serve hot with freshly toasted slices of bread.

Filled with a marinara cheesy flavor, these baked breakfast eggs are filled with delicious flavor and are simple to make. The baked eggs are a simple idea with inspiration coming from a breakfast dish known as huevos rancheros. You can choose to keep it simple like the recipe, or you can try adding in other vegetables to make the dish more filling (try spinach or roasted capsicum).

Preparing the Baked Eggs

To start these baked eggs, you are going to need a 300 mL capacity ramekins (1 per person). Give the ramekin a good spray of cooking oil, and then preheat the oven to 210 ℃.

Begin building the layers in the baked eggs by first adding a ¼ cup of marinara sauce to the bottom. Ensure you use a marinara sauce here and not a simple passata sauce. The marinara sauce tends to have more flavors in it, and usually has chunks of tomatoes and other veggies too.

Next, pour in a tablespoon of milk and then crack 2 eggs into the ramekin. You don’t need to stir in the milk or whisk the eggs.

Lastly, top the eggs with a tablespoon of grated parmesan and a tablespoon of grated gruyere cheese. Other cheeses such as cheddar, mozzarella or whatever you have on hand would also work (I just love the combination of how the gruyere and parmesan melt in this dish).

Finish by sprinkling over some finely chopped chives and then season with some freshly ground salt and pepper.

The quantities given in this recipe are for 1 serving (1 ramekin). When cooking for more simply multiply the quantities by the number of people you are cooking for.

Baking the Eggs

Place the ramekins onto a tray and then place into the preheated oven. You want to cook the dish until the egg whites are cooked through, this will typically take about 18 minutes to do so. While the eggs are cooking take a baguette and slice it on the diagonal. Drizzle some olive oil over the top and then fry each side in a frypan to crisp it up.

Once the eggs are cooked, remove them from the oven and serve them immediately with slices of the baguette to dip in.
