Baked Breakfast Eggs

- ¼ cup marinara sauce
- 2 eggs
- 1 tablespooon milk
- 1 tablespoon grated parmesan cheese
- 1 tablespoon grated gruyere cheese
- ½ teaspoon fresh chives, finely chopped
- salt and pepper
Using spray oil, lightly oil a 300mL capacity ramekin. Preheat the oven to 210 ℃.
Place the marinara sauce in the bottom of the ramekin. Add the milk on top and then crack in 2 eggs. Sprinkle over the cheeses, season with salt and pepper, and then top with freshly chopped chives.
Place the ramekin in the oven and bake for 16-18 minutes, until the egg whites are cooked through.
Serve hot with freshly toasted slices of bread.
