Savory Waffles (that are somewhat healthy)

Ingredients
 

  • 200 grams diced ham
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • 3 eggs
  • 1 ½ cups buttermilk
  • 2 tablespoons coconut oil
  • 1 cup shredded cheese
  • 3 spring onions, thinly sliced (discard white part)

Instructions
 

  • In a large mixing bowl add the flour, baking powder, salt and oregano. Stir together the dry ingredients.
  • Whisk together the eggs, buttermilk and coconut oil and add them to the dry ingredients.
  • Mix everything together until just combined. Add in the ham, cheese and spring onions and fold through.
  • Heat the waffle maker and cook the batter as per the waffle maker instructions.
  • Top with slices of avocado and a poached egg.

Waffles have always been a breakfast staple. Although they are typically served sweet, it can sometimes be nice to do a savory twist. The savory waffles are called waffles, purely because they are cooked in the waffle maker. These waffles could just as easily be called breakfast fritters. They are filled with savory fillings such as ham, spring onions, cheese and herbs. You could easily vary the ingredients that you add based on your favorite preferences.

Preparing the Waffle Batter

Start by adding the flour, baking powder, salt and oregano to a large mixing bowl. Stir together the dry ingredients. Next, add in the eggs, buttermilk and coconut oil. The coconut oil should be in liquid form for this. Stir together the wet and dry ingredients until just combined to make a batter. Finish the batter by adding in the ham, grated cheese and sliced spring onions. Fold these ingredients through, being careful not to overwork the batter.

For a vegetarian alternative – Take 1 cob of corn and use a sharp knife to shave off the kernels. Add the corn kernels instead of the ham.

Finishing the Savory Waffles

With the batter prepared, it’s now on to cooking the waffles. A simple waffle maker is the best way to cook these. You will need to follow the instructions of your waffle maker to know quantity and cooking time. Many waffle makers will use about 2/3 cup to fill.

Finish the waffles by topping them with a simple green salad, some slices of avocado and a poached egg. Make the waffles extra indulgent by also adding a drizzle of maple syrup over everything. Leftover waffles will keep covered in the fridge for 2-3 days. Reheat leftover waffles in the toaster (depending on how thick your waffles are).
