Ingredients
- 2 cups flour
- 1 cup milk
- 2 teaspoons olive oil
- 1 ½ teaspoons baking powder
- ¾ teaspoon salt
Instructions
- In a large mixing bowl combine the flour, baking powder and salt. Drizzle with the olive oil and then add the milk. Stir until the dough comes together.
- Knead the dough for about 2 minutes and then form it into a ball. Place the dough into a clean bowl and cover with plastic wrap. Leave the dough to rest for 20 minutes.
- Divide the dough into 8 equal portions and then roll each portion into a ball. Place the dough balls back into the bowl, cover again and leave to rest for another 15 minutes.
- Roll out each ball into a round pancake like shape, going as thin as possible without causing the dough to tear.
- Heat a nonstick frypan over medium-low heat. Cook the tortillas one at a time. Place a tortilla in the frypan, wait for approximately 30 seconds until the tortilla starts to puff up. Flip the tortilla over and cook the second side for another 30 seconds. Transfer the cooked tortilla to a plate and cover with foil while you cook the remaining tortillas.
If you like Mexican food, then these soft and fluffy tortillas are going to be right up your alley. They are very different to what you would get buying store-bought tortillas, which you could hardly call a proper tortilla if you ask me. The other great thing about these tortillas is that they are so easy to make, they are inexpensive, and they require no special equipment to make at all.
Making the Tortilla Dough
I’ve experimented with many different tortilla recipes, and for a while I was using a recipe that contained butter as one of the key ingredients. This recipe however has no butter, and just require some basic kitchen staples to create something amazing.
The first part to the recipe is to make the tortilla dough. In a large mixing bowl you will need to combine flour, salt and baking powder. Next drizzle in some olive oil and add some milk. Lastly, give it a mix until the dough comes together.
The final dough shouldn’t be too sticky, or too dry. If it’s too sticky, add in a little more flour. For a dry dough, add in some additional milk. I have played with the ratios for this recipe many times, and normally I find that just under a cup of milk produces the best results for texture.
Once the dough has come together, you will then need to knead the dough for about 2 minutes. Following this, place the dough in a clean bowl, cover with cling film, and rest the dough for about 20 minutes. Resting the dough helps it too relax, making it easier to roll out.
Making the Dough Balls
Once the dough has sufficiently rested, you will next need to divide the dough into 8 equal portions. From here, place the balls back in the same bowl, cover again, and rest for an additional 15 minutes.
Don’t stress too much if the dough sticks together as in a short while you will be rolling the balls out flat anyways.
Making Soft and Fluffy Tortillas
Before you roll out the balls, take a non-stick fry pan and place it over a medium-low heat. Allow the pan sufficient time to warm up otherwise the tortillas will come out a little chewy. While the pan heats up, you can start preparing the tortillas.
Working with one ball at a time, roll the dough into a round shape, going as thin as you can possibly go. A tortilla press can certainly help here, however, not everyone has one of these in their kitchen. A good rolling pin will do just as good a job (but will take a little bit longer and a bit more patience to complete).
Take the rolled tortilla and place it into your pre-warmed pan. Cook the tortilla for about 30 seconds, and then flip to cook the other side for an additional 30 seconds. The tortillas should puff up a little as they cook, and will have golden spots all over the dough.
Place the cooked tortillas on a plate and cover with foil while you complete the same process for the remaining dough. Doing this will help keep the tortillas warm and fluffy.
Serving the Soft and Fluffy Tortillas
How you serve these tortillas is really up to you, and there is many different ways they could be incorporated as part of a meal. Here are some of my favorite ways to serve these tortillas:
- Keep it simple. A plate with a pile of tortillas, a bowl of guacamole dip and a bit of sea salt on top makes for an incredible afternoon snack
- Turn these tortillas into a soft taco. Try adding in some Mexican-Style Shredded Chicken along with some lettuce, tomato, fresh herbs, guacamole and some sour cream.
- Make a tortilla-style lasagna.
- Top with some Savory Mince and then add some salad and roll up for a quick on the go lunch option.
- Use them to make Incredible Soft Fish Tacos.
