Ingredients
- 20 spring rolls wrappers
- spray oil
Filling
- 14 slices cheese
- 500 grams beef mince
- ½ cup burger pickles, finely diced
- ½ onion, finely diced
- 2 tablespoons dijon mustard
- ½ teaspoon garlic powder
- 2 teaspoons salt
Pastry Glue
- 1 tablespoon flour
- 1 ½ tablespoons water
Instructions
- Preheat the oven to 180 °C.
- Start by preparing the filling. Place the mince, onion, pickles, mustard, garlic powder and salt into a large mixing bowl. Mix until just combined. Cut each cheese slice into 3 pieces.
- Divide the mixture into 20 portions and roll each portion into a small thin sausage shape. Sandwich each mince portion between 2 pieces of prepared cheese.
- Mix the flour and water together in a small cup or bowl to prepare the pastry glue.
- Take a spring roll wrapper and place a cheese mince parcel in it. Roll it up like an envelope, sealing it closed with the pastry glue. Repeat with the remaining wrappers and filling.
- Place the spring rolls on a baking tray lined with baking paper. Give the rolls a generous spray with spray oil. Place in the oven and bake for 16 minutes. Turn the spring rolls 2-3 times during the cooking process.
- Serve the spring rolls warm with tomato sauce, extra mustard and pickles on the side.
Take your classic cheeseburger and mash it together with a spring roll and what do you get? Crispy cheeseburger springrolls. These cheeseburger spring rolls are an awesome party pleaser designed to impress friends and family. Being oven baked also makes them healthier than the traditional deep fried spring roll.
Preparing the filling
Start by taking your onions and garlic and finely chopping them. This doesn’t have to be perfect as they are about to be mixed in with the rest of the filling.
Next, add the beef mince, onions, pickles, mustard, garlic powder and salt to a large mixing bowl. Mix the contents together gently, if you over mix the mixture it will tend to come out quite tough when cooked.
Finally, divide the beef mixture into 20 balls of roughly equal size. Roll each segment into a small thin sausage shaped patty. Create a sandwich by placing a 1/3 of a cheese slice on the top and bottom of each patty
To finish the preparation work, prepare the pastry glue. In a cup or small bowl mix together flour and water until it makes a smooth and fairly thin paste.
Assembling the Cheeseburger Springrolls
With all the preparation works now done, it is now time to assemble the spring rolls. For this you will want to use premade spring roll wrappers. Spring roll wrappers are typically found in the freezer section at the supermarket. Pull them from the freezer about an hour before use, otherwise they are a pain to separate when still frozen. You will need a bit of patients when pulling apart the wrappers. A little tear here or there isn’t a problem.
Spring rolls are best made one at a time. Take a wrapper and place a sausage patty on it close to one corner. Roll up the corner to encase the patty before folding in the sides. Continue to roll up the patty to finish the spring roll. Use a pastry brush to add a small amount of pastry glue to the final corner just before completing the roll.
Place the completed spring roll on a baking tray lined with baking paper and then repeat the above process until all spring rolls have been made.
Baking the Springrolls
Take the tray of prepared spring rolls and give them a generous coverage of spray oil. Bake the completed springrolls in a moderate oven for 18 minutes, turning the spring rolls 2-3 times during the cooking process. A little cheese may ooze during the baking process, it’s totally fine and I personally think this enhances the flavors too.
An air fryer can also be used to bake the spring rolls. For this, follow the same time and temperature used to oven bake. Add a bit more spray oil to the spring rolls each time you rotate them if you use this method.
Serve the spring rolls hot with some tomato sauce, mustard and extra pickles on the side.
