Nan’s Classic Cherry Chips

Ingredients
 

  • 120 grams butter, softened
  • 3 tablespoons icing sugar
  • 1 cup self raising flour
  • ½ teaspoon vanilla essence
  • 2 tablespoons glace cheeries, finely chopped

Instructions
 

  • Preheat the oven to 180 °C.
  • Cream together the butter and sugar. Add the cherries, essence and flour and mix until just combined.
  • Place teaspoons of batter onto a tray lined with baking paper. Press the balls flat.
  • Bake the biscuits for 10 minutes, until light golden brown in color.

This biscuit recipe comes straight from the folder of my Nanna’s recipes. I have many memories of having these biscuits, especially when I was younger. There was often a batch of these biscuits waiting for us kids as we came home from school, typically transported in one of those classic yellow tupperware containers.

You could say the flavor of these biscuits is very reminiscent of shortbread, with a hint of sweetness thrown in from the glace cherries. Using only a handle of ingredients makes them easy to make, and they are bound to be something the children will love too.

Making the biscuits

There really isn’t a great deal required to make these biscuits. To start with you will want to cream the butter and sugar together. You could do this by hand, but a stand mixer will definitely make this a much easier process. Cream the butter and sugar together for a couple of minutes, leaving you with a nice light yellow mixture. Often people skimp on this step when creaming the butter, and don’t do this for long enough.

Once your butter and sugar is sufficiently creamed, the next step is to add in the flour, essence and cherries. At this point, you want to mix all ingredients together until just combined. Over mixing the dough will result in flat biscuits, which is not what we are going for here.

Take teaspoons of the batter and roll them into balls. Transfer them to a tray lined with baking paper.

Lastly, squish the balls down to make them flat. The prepared biscuits then go into a moderate oven and cook for 10 minutes, until light golden brown in color.

Once the biscuits have come out of the oven, give them 5 minutes to cool, before transferring them to a baking tray to finish the cooling process.

The cooked biscuits will store in an air tight container for up to a week, that’s if they manage to last that long before being eaten.
