Tempting Chocolate Fudge Slice

  • ¾ Cup Sugar
  • 1 Cup Self-Raising Flour
  • 120 grams Butter
  • 1 egg
  • 1 Cup Mixed Fruit
  • 1 Tablespoon Coconut
  • 1 Tablespoon Cocoa

Instructions
 

  • In a large mixing bowl rub the butter into the flour.
  • Add in the dry ingredients and fruit. Add the egg and mix until everything is thoroughly combined.
  • Place the batter into a slice tin lined with baking paper and press the batter down to make an even layer.
  • Bake in a moderate oven for 20 mins.
  • Cut into slices while hot and leave in the tin until cool. Dust with icing sugar.

This chocolate fudge slice is filled with coconut and chocolate flavors and has a soft yet crumbly texture. It can be made with little effort but always gives great results. You know this recipe is popular in my household simply by looking at the pages; they are covered in flour and cocoa, from the many years of baking it.

Essentially a slice is a cross between a cake and a cookie. For those outside of Australia, you might know of a slice as a traybake or sheetcake. A batter is pressed into a tin and then baked as a large sheet, which is later sliced. Slices can be quick and easy to make, and usually require little effort to assemble.

Preparing the Slice Batter

To start, in a large mixing bowl, rub the butter into the flour until the two are combined together. To the flour mixture add sugar, coconut, cocoa and mixed fruit. Next, add 1 large egg and then stir everything together. The resulting batter should be fairly thick, and somewhat sticky.

You will need to use softened butter for this recipe. Either allow the butter to come to room temperature before using or chop the butter into small pieces and microwave for 30 seconds prior to mixing with the flour.

Baking the Fudge Slice

The completed batter next needs to be transferred to a slice tin. For this you want a slice tin that is approximately 20 cm x 28 cm in size. Line the slice tin with a sheet of baking paper. A light spray of cooking spray can help stick the baking paper to the tin, which can make spreading the slice easier to do.

Tip the batter into the prepared tin and then use your hands to spread it to the edges, ensuring the batter is spread in an even layer across the tin.

To finish, bake the prepared slice in a moderate oven for 20 minutes. Once cooked, remove the slice from the oven and allow it to cool in the tin. When cool, dust with icing sugar and then slice into squares.

Store the finished slice in an air-tight container. The fudge slice will keep for at least a week.

The slice is typically served just dusted with icing sugar. You may however want to make it a bit fancier by icing the slice instead. Mix 1 cup of icing sugar with 1 tablespoon of cocoa and 1 tablespoon of milk to make a suitable icing mixture.
