Soft Beef Tacos

- 500 grams beef mince
- 1 tablespoon olive oil
- 3 tablespoons taco seasoning
- 1 cup passata sauce
- salt and pepper
To Serve
- flour or corn tortillas
- grated cheese
- olive oil, for frying
- shredded lettuce
- diced tomato
- sour cream
- fresh herbs, such as coriander
Heat a large frypan over medium-high heat. Add the olive oil and beef mince. Break up the mince with the back of a spoon and cook until it is thoroughly browned.
Add the taco seasoning and cook for a further minute.
Add the passata sauce, stir through, and then reduce to a simmer. Cook until the meat has thickened, and the liquid has reduced.
Add ½ cup of beef mixture to one side of each taco. Sprinkle with cheese and then fold the taco in half.
Heat a tablespoon of olive oil in a large frypan over a medium heat. Working in batches, cook each taco for 1-2 minutes each side, until golden and the cheese has melted.
Open the cooked tacos and stuff with shredded lettuce, diced tomato and sour cream.
