Soft Beef Tacos

Ingredients
 

  • 500 grams beef mince
  • 1 tablespoon olive oil
  • 3 tablespoons taco seasoning
  • 1 cup passata sauce
  • salt and pepper

To Serve

  • flour or corn tortillas
  • grated cheese
  • olive oil, for frying
  • shredded lettuce
  • diced tomato
  • sour cream
  • fresh herbs, such as coriander

Instructions
 

  • Heat a large frypan over medium-high heat. Add the olive oil and beef mince. Break up the mince with the back of a spoon and cook until it is thoroughly browned.
  • Add the taco seasoning and cook for a further minute.
  • Add the passata sauce, stir through, and then reduce to a simmer. Cook until the meat has thickened, and the liquid has reduced.
  • Add ½ cup of beef mixture to one side of each taco. Sprinkle with cheese and then fold the taco in half.
  • Heat a tablespoon of olive oil in a large frypan over a medium heat. Working in batches, cook each taco for 1-2 minutes each side, until golden and the cheese has melted.
  • Open the cooked tacos and stuff with shredded lettuce, diced tomato and sour cream.
