Ingredients
- 2 Carrot, peeled thinly julienned
- 2 Lebanese Cucumber halved and thinly sliced
- 3 Spring Onions thinly sliced
- 2 Tablespoons Rice Vinegar
- 1 teaspoon caster sugar
- 100 grams rice noodles cooked
- Sesame Seeds, to garnish
Cooked Chicken
- 500 grams chicken tenderloins or 2 chicken breasts
- Salt and Pepper
- 2 Tablespoon Vegetable Oil
Peanut Sauce
- 220 grams Peanut Butter smooth
- 2 Tablespoons Water
- 2 Tablespoons Sweet Chilli Sauce
- 1 Tablespoons Sesame Oil
Instructions
Preparing the chicken
- Add the chicken to a small baking dish. Drizzle with olive oil and season with salt and pepper. Toss to coat and then bake at 180 °C for 15 minutes.
- Remove the chicken from the oven and then shred into small pieces
Preparing the Salad
- Add the vinegar and sugar to a large mixing bowl and stir to combine. Add the spring onions, carrots and cucumbers and toss to combine.
Peanut Sauce
- Combine all the sauce ingredients together in a bowl and whisk to combine
To Serve
- Place the rice noodles onto a serving platter. Top with half of the salad and the chicken. Add the remaining salad and then drizzle with peanut sauce. Scatter sesame seeds over the top
Bang bang chicken is one of those dishes that will always tantalize your taste buds. The salad is a mix of crisp vegetables and chicken, topped with a moorish peanut flavored sauce. It’s a dish you can guarantee that both adults and children are going to love.
Preparing the Salad Components
A mandolin is the perfect kitchen accessory here for preparing the salad components. It will allow you to efficiently cut everything quickly and uniformly, which helps add to the presentation at the end.
For the salad you will need
- 2 carrots – peeled and then thinly julienned.
- 2 cucumbers – halved and then thinly sliced
- 4 spring onions – thinly sliced
Combine the rice vinegar and sugar in a large bowl and then add the carrot, cucumber and spring onions. Toss to combine everything together
Preparing the Chicken
Take the chicken tenderloins and place them in a small baking dish. Drizzle the chicken with olive oil and then season with salt and pepper. Bake the chicken for 15 minutes in a moderate oven, until cooked through.
Transfer the cooked chicken to a chopping board and then shred into small pieces.
Note: You could also cook the tenderloins in an air fryer for 12-14 minutes or sous vide the chicken as alternative cooking methods.
Making the Peanut Sauce
To make the tantalizing peanut sauce, combine peanut butter, sweet chilli sauce and sesame oil in a mixing bowl. Add in boiling water and then stir to combine. Keep adding small amounts of hot water at a time until the desired consistency is achieved.
Serving the Bang Bang Chicken
Start by placing cooked rice noodles on the serving platter. Top with half of the salad mixture and then the chicken. Top everything with the remaining salad. Drizzle the peanut sauce over the top and then scatter with sesame seeds.
