Orange Chocolate Chip Pancakes

Ingredients
 

  • 1 cup self-raising flour
  • 1 cup milk
  • 1 egg beaten
  • 1 tablespoon sugar
  • 1 tablespoon almond meal
  • pinch salt
  • ¼ cup chocolate chips
  • butter
  • rind of 1 orange
  • cream to serve

Instructions
 

  • In a large mixing bowl, add the flour, sugar, almond meal and salt.
  • Add in the milk and egg and mix until the batter just come together and the streaks of flour have disappeared.
  • Add in the chocolate chips and orange rind and stir briefly to incorporate.
  • Heat a large frying pan over medium heat.
  • Add a small knob of butter and swirl the pan to coat.
  • Add a ¼ cup of batter to the pan at a time. Try not to overcrowd the pan.
  • Give the pancakes 1-2 minutes to cook and then flip to cook the other side. The pancakes will start to bubble when its time to flip them.
  • Repeat the process to cook the rest of the batter, adding more butter to the pan between cooking each batch of pancakes.
  • Serve with cream or icecream.
